Apple Sauce Coffee Cake

Gluten / Dairy free coffee cake that the whole family will enjoy. Great for breakfast or parties!

Ingredients

For the Streusel Topping

  • 4 tbsp ghee butter or coconut oil (not melted)
  • 1/3 cup GF flour (King Arthur gluten free flour)
  • 1/2 cup Lakanto golden sugar
  • 1/2 tsp cinnamon
  • 1/2 cup walnuts chopped finely

For the Coffee Cake

  • 4 tbsp ghee butter or coconut oil (not melted)
  • 1 1/3 cup GF flour (King Arthur gluten free flour)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup lakanto golden sugar
  • 1/2 tsp cinnamon
  • 3 eggs
  • 1 cup apple sauce

For Powdered Sugar Frosting

  • 1/4 cup of Lakanto powdered sugar
  • 2 Tbsp of water

Instructions

For the Streusel Topping

  1. In a bowl, cream the flour and butter together using a fork or pastry cutter.
  2. Stir in the rest of the ingredients and set aside.

For the Coffee Cake

  1. Preheat the oven to 375 degrees F. Prepare the 8 x 8 inch baking dish or bread pan with nonstick spray.
  2. In a bowl, cream the butter and flour together using a pastry cutter.
  3. Add the rest of the ingredients and mix well.
  4. Pour the batter into the baking dish and level off the batter.
  5. Drizzle on the streusel evenly over the top of the batter.
  6. Place in the oven and bake for approximately 45 minutes or until a toothpick that has been inserted in the middle of the cake comes out clean.
  7. Remove from the oven and allow to cool 10 minutes before slicing.
  8. Mix Powdered sugar with water and drizzle over the coffee cake. Enjoy!
