Ingredients

Streusel Topping

  • 4 tbsp ghee butter or coconut oil (not melted)
  • 1/3 cup GF flour
  • 1/2 cup lakanto golden sugar
  • 1/2 tsp cinnamon
  • 1/2 cup walnuts chopped finely

Coffee Cake

  • 4 tbsp ghee butter or coconut oil (not melted)
  • 1 1/3 cup GF flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup lakanto sugar
  • 1/2 tsp cinnamon
  • 3 eggs
  • 1 cup apple sauce

Powdered Sugar Frosting

  • 1/4 cup of lakanto powdered sugar
  • 2 Tbsp of water

Directions

For the Streusel Topping

  1. In a bowl, cream the flour and butter together using a fork or pastry cutter.
  2. Stir in the rest of the ingredients and set aside.

For the Coffee Cake

  1. Preheat the oven to 375 degrees F. Prepare the nonstick baking bread loaf pain, 9.5 x 5 inches, and spray with cooking spray.
  2. In a bowl, cream the butter and flour together using a pastry cutter.
  3. Add the rest of the ingredients and mix well.
  4. Pour the batter into the baking dish and level off the batter.
  5. Drizzle on the streusel evenly over the top of the batter.
  6. Place in the oven and bake for approximately 30 minutes or until a toothpick that has been inserted in the middle of the cake comes out clean.
  7. Remove from the oven and allow to cool 10 minutes before slicing. 
  8. Drizzle the frosting on top and enjoy!
