Healthy Cornbread Muffins

And the best part? It’s half the calories of any cornbread you’d find at a restaurant.

Ingredients

  • Gluten free pamelasproducts Cornbread Mix⁣ (pick this up at sprouts or wholefoods)
  • 1 cup of apple sauce⁣
  • 1/3 cup of egg whites⁣
  • 1/3 cup of lakanto Syrup or any sugar free syrup⁣
  • 1/2 cup of lakanto sugar⁣

Directions

  1. Preheat your oven to 350 °F (175 °C) and line a muffin pan (or two) with liners.⁣
  2.  In a large mixing bowl, stir together all the ingredients listed above.⁣
  3. Pour the batter evenly into the muffin liners, about 3/4 full. (May be some left overs to make 2 or 3 more muffins) ⁣
  4. Bake for 20 to 25 minutes. A toothpick inserted in the middle should come out mostly clean.⁣
  5. Let cool for 5 minutes and then remove to a wire rack to cool completely.
  6. Serve with breakfast, snack, or dinner!
