Banana bread is a classic treat, especially when you have ripe bananas at home. This simple recipe is sure to delight your taste buds for breakfast or as a midday snack.
Preheat oven to 350 and grease a 9×5″ loaf pan, or line with parchment paper.
Mash bananas in a bowl. Add the rest of the wet ingredients and mix well. Add the oat, almond flour and baking soda, and stir until just combined. Optional: add some chocolate chips, walnuts, raisins.
Pour batter into loaf pan and bake for 30 to 40 minutes, or until toothpick inserted comes out clean.
Once done allow loaf to cool for 10 minutes before slicing and serving.
Bonus: mix 1/4 cup of Lakanto powdered sugar with 1 to 2 Tbsp of water. Once combined pour over cooked bread to make a frosting.
