Healthy Hearty Lasagna
My first attempt making a healthy lasagna and it turned out amazing.
Primal Kitchen Sauce and healthy ricotta cheese was a game changer for the lasagna.

Ingredients

2 boxes of Jovial Gluten Lasagna Noodles (Uncooked)

1 lb of Organic Lean Ground Beef or Turkey
-
2 to 3 cups of Fresh Organic Spinach or Kale
-
2 Jars of Primal Kitchen Marinara Sauce
-
2 Kite Hill Ricotta Cheese
-
Optional: 1/4 cup Vegan Parmesan Cheese
-
Fresh Basil
Directions
1. Preheat oven to 375 degrees F (190 degrees C).
2. Cook pasta according to package directions. Rinse under cold water and set aside.
3. Cook beef or turkey over medium high heat on stove until no pink remains. Drain any fat.
4. Spray a 9×13 casserole dish with cooking spray. Then, add 1 cup of marinara sauce to a 9×13 pan. Followed by 3 lasagna noodles. Top with a layer of ricotta cheese, ground meat, spinach or kale, thin layer of sauce, and repeat two to three more times. Depending how thick you want your lasagna.
5. Finish with 3 noodles topped with sauce.
6. Cover with foil and bake for 30 minutes.
7. Uncover and bake an additional 10 minutes or until browned and bubbly. Broil 2-3 minutes if desired.
8. Rest 5 to 10 minutes, add Parmesan cheese and basil on top before cutting. Enjoy!
