Kimmy's Lasagna

I recently took on the challenge of making lasagna for the first time, and I’m thrilled with how it turned out – simply amazing!

The use of Primal Kitchen Sauce and wholesome ricotta cheese truly elevated the dish. I hope you find as much joy in savoring it as I did in crafting it!

I made a conscious effort to keep it as healthy as possible, infusing the recipe with nutritious choices.

Ingredients

  • 12 Lasagna Noodles (Uncooked) 
  • 1 lb of Organic Lean Ground Beef or Turkey (season with salt to your liking)
  • 2 to 3 cups of Fresh Organic Spinach or Kale
  • 1 Jar of Primal Kitchen Marinara Sauce (Buy 2 if you want it more saucy. I recommend getting an extra just incase).
  • 2 Kite Hill Ricotta Cheese
  • 1/2 cup of Raw Shredded Goat Cheese
  • 1/4 cup Parmesan Cheese
  • Fresh Basil
  • Optional: side fresh salad, zucchini noodles or broccoli.

Directions

1. Preheat the oven to 375 degrees F.

2. Cook the pasta according to package directions, rinse under cold water, and set aside.

3. In a pan over medium-high heat on the stove, cook beef or turkey until no pink remains. Drain any fat.

4. Spray a 9×13 casserole dish with cooking spray. Add 1 cup of marinara sauce to the dish, followed by 3 lasagna noodles. Create layers with ricotta cheese, ground meat, spinach or kale, a thin layer of sauce, and repeat two more times.

5. Finish with 3 noodles topped with sauce and goat cheese.

6. Cover with foil and bake for 30 minutes.

7. Uncover and bake an additional 10 minutes or until browned and bubbly. Broil for 2-3 minutes if desired.

8. Allow it to rest for 5 to 10 minutes, then add Parmesan cheese and basil on top before cutting.

9. Enjoy your delicious homemade lasagna!
