Healthy Red Enchiladas

Ingredients

 
Toppings:
  • Plain Greek yogurt or dairy free plain yogurt
  • Fresh cilantro
  • Sliced black olives
  • Avocado
  • Salsa

Directions

1. Preheat the oven to 350ºF.

2. Heat a pan over medium heat and add ground beef or bison. Cook the beef for 10 minutes, then add the entire package of Siete Mild Taco Seasoning. Add 1/4 cup of water to the pan, mix together, and set aside.

3. Heat a medium pan on medium-high heat and briefly cook each tortilla on both sides for 5-10 seconds, just until they soften.

4. Spray a baking dish with avocado spray and add enough enchilada sauce to lightly cover the bottom of the dish.

5. Roll each tortilla with taco ground beef, beans, and a spoonful of queso, then place them in the dish.

6. Add extra queso over the enchiladas and top with the remaining red enchilada sauce.

7. Cover the dish with aluminum foil and bake for 15-20 minutes.

8. Take out of the oven, uncover, and top with Greek yogurt or dairy-free yogurt.

9. Garnish with avocado, salsa, olives, and chopped cilantro.
