Date Maple Pecan Cookies

A delightfully simple recipe that my husband loved! 🙂

A must-try, especially if you have a fondness for dates and pecans.

Ingredients

• 1/2 cup of creamy cashew butter
• 1/2 cup of maple syrup (I used Lakanto)
• 6 to 8 pitted dates
• 1/3 cup of pecans
• 1 cup of cassava flour  
 

Directions

1. Preheat your oven to 350 degrees and line a baking sheet pan with parchment paper.

2. In a food processor, chop the dates and pecans together.

3. Mix the cashew butter and maple syrup until smooth.

4. Stir in the cassava flour until a dough forms. Then mix in the chopped dates and pecans. Using a spoon, scoop out a small amount of dough and roll it into a ball.

5. Place each cookie ball onto the baking sheet pan and flatten the dough slightly using the palm of your hand. Repeat until all the dough is used.

6. Bake in the oven for 10 minutes.

7. Allow the cookies to cool for 10 minutes.
