Healthy Apple Cupcakes

My husband and I absolutely loved this recipe. 

Such a delightful treat without all the sugar. 

This recipe is great for gatherings too!

Ingredients

Wet Ingredients 
  • 2 eggs
  • 1/2 cup of apple sauce 

  • 1/2 cup of maple syrup

  • 1 tbsp of melted coconut oil

Dry Ingredients 

  • 1 1/3 cup (120g) of oat flour 

  • 1 tbsp of coconut flour
  • 1 tsp of baking powder
  • 1 tsp of nutmeg
  • 2 tsp of cinnamon

  • 1 large apple chopped up

  • 1/3 cup of lilys white chocolate chips

Frosting Ingredients 

Directions

  1. Preheat the oven to 350°F (180°C). Line a muffin tin with liners and spray with cooking spray. 
  2. Sift the flour, baking powder, cinnamon and nutmeg into a mixing bowl.
  3. In a separate bowl whisk together the eggs, maple syrup, apple sauce, and melted coconut oil together. Add the chopped up apples.
  4. Pour the wet ingredients into the dry ingredients and mix well using a whisk.
  5. Optional add chopped white chocolate chips, walnuts, raisins, or dried pineapple chunks to the batter.
  6. Pour batter into muffin tins that are sprayed with some kind of cooking spray so cupcakes don’t stick, fill 2/3 full (there will be extra batter left over, wait until this batch is done then cook the rest of the batter)
  7. Bake in the center of the oven at 350˚F for 20-23 minutes, or until a toothpick inserted into the center comes out clean. Let them cool for 10 minutes in the pan then remove cupcakes to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting.
  9. Add the powdered sugar, cream cheese in a high speed blender.
  10. Add frosting to the top of the cupcakes and enjoy!
