Paleo Baked Banana Pancake Bars

Healthy Banana Pancake Bars that everyone will love. 

This recipe is great for the kids or if you are needing a quick mid day snack. 

You won’t be disappointed.

Ingredients

Ingredients 
  • 2 eggs
  • 2 ripe bananas
  • 1 package of Birch Benders Paleo mix
  • 2 tsp of cinnamon
  • 2 cups of water (adjust accordingly) 
  • Extras: pecans, walnuts, chocolate chips, blueberries.
  • Toppings: maple syrup, powdered sugar, fruit, honey. 

Directions

  1. Preheat the oven to 350°F (180°C). Spray a 9×13 inch baking dish with cooking spray.
  2. In a medium sized bowl mix the eggs and bananas together until well combined. Add in the Birch Benders pancake mix into the bowl along with the water and cinnamon. Mix well. 
  3. Add in any extras you would like into the batter. I added chopped up pecans into this batch. 
  4. Pour batter into prepared baking dish and put into oven.
  5. Bake for 25 to 30 mins or until you poke the center with a tooth pick and it comes out clean. 
  6. Let it cool for 5 mins then cut into squares. Should come out to 24 squares. 
  7. Top with maple syrup, powdered sugar, fruit or honey and Enjoy
