Instructions

  • Preheat the oven to 350ºF.
  • Heat a pan over medium heat and add ground beef or bison. Cook the beef for 10 minutes, then add the entire package of Siete Mild Taco Seasoning. Add 1/4 cup of water to the pan, mix together, and set aside.
  • Heat a medium pan on medium-high heat and briefly cook each tortilla on both sides for 5-10 seconds, just until they soften.
  • Spray a baking dish with avocado spray and add enough enchilada sauce to lightly cover the bottom of the dish.
  • Roll each tortilla with taco ground beef, beans, and a spoonful of queso, then place them in the dish.
  • Add extra queso over the enchiladas and top with the remaining red enchilada sauce.
  • Cover the dish with aluminum foil and bake for 15-20 minutes.
  • Take out of the oven, uncover, and top with Greek yogurt or dairy-free yogurt.
  • Garnish with avocado, salsa, olives, and chopped cilantro.
