Mini Apple Pies

Equipment

  • 12-Cup Muffin Pan

Ingredients

Crust

  • cups Bobs mill gluten free all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ¼ cup Lakanto sugar
  • cup oat milk

Apple Filling

  • 2 large organic apples and 3 small apples
  • 1 tbsp coconut oil
  • 2 tsp cinnamon
  • cup lakanto sugar

Oat Crumble

  • 1 cup instant oats
  • ½ cup apple sauce
  • 1 tsp cinnamon
  • 2 tbsp honey

Instructions

Crust

  • Preheat oven to 350 degrees and spray a 12-cup muffin pan with spray oil. 
    2) Mix all dry ingredients and add in the oat milk and mix well until a ball forms. May need to use hands to form ball. 
    3) On a lightly floured surface, flatten out dough with a rolling pin and cut out 12 circles using a cup. 
    4) Place the dough into the muffin cups to form a nice mini pie crust. 
     

Apple Filling

  • Cut the apples and set in a pan over medium heat with coconut oil. 
    2) Add lakanto sugar and cinnamon. Continue heating until liquid starts to boil.
    3) Continue to cook for about 5 minutes, then remove from heat.
    4) Pour the apple filling into mini crusts. 

Oat Crumble

  • Add all ingredients in a bowl and mix well. Scoop a big spoon full of oat crumble and top the apples in the mini crusts.
    2) Bake for 25 to 30 mins or until crust is a golden brown. 
    3) When finished allow to cool for 10 mins. 
    Bonus: Top with lakanto powdered sugar or vanilla ice cream.
