Kimmy's Healthy Egg Sliders

Equipment

  • Medium Frying Pan
  • Spatula or Wooden Spoon

Ingredients

  • 2 to 3 slices sourdough bread
  • ¼ to ½ avocado
  • 3 tbsp homemade queso
  • handful fresh micro greens, arugula, kale, or spinach
  • ½ cup egg whites or 2 whole eggs
  • 1 tsp coconut oil
  • dash sage, rosemary, salt, and pepper
  • 2 tbsp shredded raw cheddar goat cheese

Instructions

  • Crack eggs Or pour 1/2 cup of egg whites into a bowl and season with salt, pepper, sage, and rosemary. Lightly beat with a fork until the yolks and whites are combined.
    2. Heat a frying pan over a medium heat. Melt a teaspoon of coconut oil in the pan so the base and sides are covered. When the coconut oil starts to foam, pour in the eggs and stir immediately with a wooden spoon or spatula. Keep stirring gently as they cook to break up the egg and help it to ‘scramble’. This should take 3–5 minutes.
    3. While eggs are cooking place the sourdough bread into a toaster and toast until the bread is golden brown.
    4. Once eggs and toast are done assemble your sliders. Spread avocado, queso, then fresh greens on toast. Next, place the eggs on top of the greens, and garnish with shredded raw cheddar goat cheese.
