Healthy Red Enchiladas

  • avocado, cilantro, greek yogurt, dairy free yogurt, black olives


  • Preheat the oven at 350ºF.
    2. Heat a pan to medium heat and add ground beef or bison. Cook beef for 10 mins - add entire package of Siete Mild Taco Seasoning Add 1/4 cup water to pan. Mix together, set aside.
    3. Heat a medium pan on medium high heat and cook each tortilla on each side for 5-10 seconds, just until they soften.
    4. Spray baking dish with avocado spray. Add enough of the enchilada sauce to lightly cover the bottom of the dish.
    5. Roll each tortilla with taco ground beef, beans, and spoon full of queso and place in the dish.
    6. Add extra queso over enchiladas and top with remaining red enchilada sauce.
    7. Cover the dish with aluminum foil and bake for 15-20 mins.
    8. Take out of oven and remove foil and top with greek yogurt or dairy free yogurt, avocado, salsa, olives, and chopped cilantro.
