Date Maple Pecan Cookies

Ingredients

  • ½ cup creamy cashew butter
  • ½ cup maple syrup
  • 6 to 8 pitted dates
  • cup pecans
  • 1 cup cassava flour

Instructions

  • Preheat your oven to 350 degrees and line a baking sheet pan with parchment paper.
  • In a food processor, chop the dates and pecans together.
  • Mix the cashew butter and maple syrup until smooth.
  • Stir in the cassava flour until a dough forms. Then mix in the chopped dates and pecans. Using a spoon, scoop out a small amount of dough and roll it into a ball.
  • Place each cookie ball onto the baking sheet pan and flatten the dough slightly using the palm of your hand. Repeat until all the dough is used.
  • Bake in the oven for 10 minutes.
  • Allow the cookies to cool for 10 minutes.
