Preheat your oven to 350 degrees and line a baking sheet pan with parchment paper.
In a food processor, chop the dates and pecans together.
Mix the cashew butter and maple syrup until smooth.
Stir in the cassava flour until a dough forms. Then mix in the chopped dates and pecans. Using a spoon, scoop out a small amount of dough and roll it into a ball.
Place each cookie ball onto the baking sheet pan and flatten the dough slightly using the palm of your hand. Repeat until all the dough is used.
