Buckwheat Banana Protein Pancakes
My twin sister and I love to enjoy a good stack of pancakes.
One of our favorites is banana buckwheat pancakes.
High in fiber, gluten free, dairy free and will make the belly happy!

Ingredients
- 2 Small Ripe Bananas (about 120 gr) – Or 1 Large Ripe Banana
- 1 cup Dairy-Free Milk
- 1 Egg
- 1 cup GF Buckwheat Flour
- 1 teasp. Baking Powder – Gluten-Free certififed
- 1 pinch Salt
- 1/2 teasp. Cinnamon Powder
- Spray Oil to grease to pan
Topping & Frosting Options:
- Maple Syrup
- 1 scoop of chocolate Vegan Protein Powder mixed with 1/4 cup of dairy free milk.
- 2 tbsp of PBfit mixed with 2 tbsp of water or dairy free milk.
- Spread any kind of nut butter
- Top with berries or sliced bananas of any kind.
- Sprinkle Lakanto Powder Sugar
- Shredded Coconut
Directions
1) Mash the Bananas in a medium-size bowl. Whisk with the Milk and Egg.
2) Add the Buckwheat Flour, Baking Powder, Salt and Cinnamon Powder and mix until there are no more lumps.
3) Spray a non stick pan with spray oil and turn the burner on to medium.

4) Scoop 1/4 cup of the batter and spread evenly onto pan. Flip the pancake once you start seeing bubbles form or the pancakes begins to look more firm. Repeat until you used up all the batter.
5) Top with any kind of special toppings you like. Have fun and get creative with your toppings. It is the best part. 🙂
