St Patty's Day Chocolate Chip Cookies

A great simple St Patty’s Day Cookie recipe that is vegan friendly. 

Secret to making the cookies turn green is using sunflower butter. Sunflower butter mixed with baking soda will turn green. Making it a perfect dessert for St Patty’s Day!! 🙂

1.Preheat oven to 175C (350F). Line one baking sheet with parchment paper.⁣⁣⁣

⁣⁣⁣
2. In a medium sized mixing bowl, add sunflower butter, packed golden monk fruit sugar. Mix together until smooth.⁣⁣⁣
⁣⁣⁣
3. Add flour, baking soda, and salt. Stir everything together until the dough is uniform but very crumbly. Add 2 tablespoon of water and mix well. If the dough is still too crumbly to roll into balls, add another tablespoon of water and mix again until you get the right consistency. Mix in the chocolate chips. ⁣⁣

4. Scoop the dough using a spoon and gently roll into balls and flatten slightly using the palm of your hand. Place the cookies dough onto lined baking sheet.⁣⁣⁣
⁣⁣⁣
5. Bake for 7-9 minutes, or until the edges are slightly golden. It is okay if they look underdone in the middle. Remove from oven and allow the cookies to set on the baking trays for at least 5 minutes before very gently transferring to a cooling rack.
