Healthy Red Enchiladas
Who doesn’t love enchiladas?
This recipe is guilt free and made with love.
It is one of my favorite family dinners.
Serve with Spanish rice or a nice fresh salad. 🙂

Ingredients
- 1 package of Siete cassava tortillas
- 1 can of low sodium black beans
- Kimmy’s homemade cashew queso
- 1 jar of Siete red enchilada sauceÂ
- 1 lb of ground organic  beef or bison
- Siete mild taco seasoning

Toppings:
- Plain Greek yogurt or dairy free plain yogurt
- Fresh cilantro
- Sliced black olives
- Avocado
- Salsa
Directions
- Preheat the oven at 350ºF
- Heat a pan to medium heat and add ground beef or bison.
- Cook beef for 10 mins – add entire package of Siete Mild Taco Seasoning Add 1/4 cup water to pan. Mix together, set aside.
- Heat a medium pan on medium high heat and cook each tortilla on each side for 5-10 seconds, just until they soften
- Spray baking dish with avocado spray Add enough of the enchilada sauce to lightly cover the bottom of the dish
- Roll each tortilla with taco ground beef, beans, and spoon full of queso and place in the dish.
- Add extra queso over enchiladas and top with remaining red enchilada sauce.
- Cover the dish with aluminum foil and bake for 15-20 mins
- Take out of oven and Uncover and top with greek yogurt or dairy free yogurt.Â
- Garnish with avocado, salsa, olives, and chopped cilantro.
