Mini Apple Pies

With the holidays just around the corner, I aimed to create a guilt-free and healthy apple pie. Opting for mini apple pies, I utilized monk fruit sugar and honey as sweeteners.

This delightful treat is not only a healthier alternative but also caters to a vegan and gluten-free lifestyle.

Ingredients

Crust

  • 1.5 cups of Bob’s mills gluten free all purpose flour
  • 1 tsp of cinnamon
  • 1/4 cup of lakanto golden sugar
  • 1 tsp of baking powder
  • 2/3 cup of oat or nut milk

Apple Filling

Oat Crumble 

  • 1 cup of instant oats 
  • 1/2 cup of apple sauce
  • 1 tsp of cinnamon 
  • 2 tbsp of honey (use maple syrup if vegan)

Directions

Crust:

  1. Preheat oven to 350 degrees and spray a 12-cup muffin pan with spray oil. 
  2. Mix all dry ingredients and add in the oat milk and mix well until a ball forms. May need to use hands to form ball. 
  3. On a lightly floured surface, flatten out dough with a rolling pin and cut out 12 circles using a cup. 
  4. Place the dough into the muffin cups to form a nice mini pie crust. 

Filling:

  1. Cut the apples and set in a pan over medium heat with coconut oil. 
  2. Add lakanto sugar and cinnamon. Continue heating until liquid starts to boil.
  3. Continue to cook for about 5 minutes, then remove from heat.
  4. Pour the apple filling into mini crusts. 

Oat Crumble:

  1. Add all ingredients in a bowl and mix well. 
  2. Scoop a big spoon full of oat crumble and top the apples in the mini crusts.
  3. Bake for 25 to 30 mins or until crust is a golden brown. 
  4. When finished allow to cool for 10 mins. 
  5. Bonus: Top with lakanto powdered sugar or vanilla ice cream.
