Kimmy's Healthy Egg Sliders
One of my favorite breakfast meals!! My husband and I love to have this over the weekend for brunch after a nice long run with our puppy Nina.
This can be made gluten & dairy free.
The secret to this recipe is my healthy paleo queso. 🙂
Ingredients
Directions
- 2 to 3 slices of sour dough bread
- 1/4 to 1/2 avocado
- 3 tbsp of homemade queso
- handful of fresh micros greens, arugula, kale, or spinach
- 1/2 cup of egg whites or 2 whole eggs
- 1 tsp of coconut oil
- seasoning – dash of sage, pepper, salt, rosemary
- 2 tbsp shredded raw cheddar goat cheese
- Crack eggs Or pour 1/2 cup of egg whites into a bowl and season with salt, pepper, sage, and rosemary. Lightly beat with a fork until the yolks and whites are combined.
- Heat a frying pan over a medium heat. Melt a teaspoon of coconut oil in the pan so the base and sides are covered. When the coconut oil starts to foam, pour in the eggs and stir immediately with a wooden spoon or spatula. Keep stirring gently as they cook to break up the egg and help it to ‘scramble’. This should take 3–5 minutes.
- While eggs are cooking place the sourdough bread into a toaster and toast until the bread is golden brown.
- Once eggs and toast are done assemble your sliders. Spread avocado, queso, then fresh greens on toast. Next, place the eggs on top of the greens, and garnish with shredded raw cheddar goat cheese.
- Enjoy!
